Fish tacos. 

I don’t like super verbose and wordy food blog posts. I don’t want to read 10 paragraphs about wha tyou made. I want to know what you liked, what you might substitute, and the main ingredients used. So I’ll stop writing nonsense, and write the recipe.

Fish Tacos

12 oz of your favorite white fish (tilapia, halibut, cod, swai etc. Tilapia and cod are usually cheapest. Frozen is perfectly fine. That’s what I use)

Bell Pepper Salsa :
Ingredients
4 mini bell pepers (or one small regular bell pepper)
1 shallot, or about half of a small red onion
1 roma tomato, more if you like tomatoes more than peppers
Three finger pinch of salt
1 minced garlic clove or garlic powder to taste
A big old handful of cilantro.
Directions
Just chop all this stuff up very finely and combine.

Cilantro Jalapeno Salsa:
Ingredients
One jar pickled jalapenos
One bunch cilantro

Cabbage Topping:
Ingredients
1/2 small head of cabbage
Lots of cilantro
Juice of 1/2 lime + zest of half of the lime
Salt and pepper to tate
Directions
Thinly slice the cabbage, chop the cilantro, and add the other stuff. Mix with your hands and you are done

Seasoning for the Tacos:
Ingredients
Cumin
Chili Powder
Garlic Powder
Onion Powder
Salt
Paprika
Dried oregano
Coriander
(I didn’t measure quantities. I put in a little bit of all of this, and then added more of whatever it needed. Go heavy on the cumin. You can always just buy a premade taco seasoning. Those are just great.)

Cooking and Assembling the Tacos
Instructions:
Follow instructions on the package for the fish if using frozen. Defrosting times can vary.
Pat off the fillets with paper towels and liberally season with your taco seasoning.
Heat an oil that can take a high heat like canola or vegetable over about medium heat.
Touch the fish to the oil and if it sizzles then you are ready to go.
Fish takes only a few minutes each side. 2-5 minutes depending on the thickness of your fillets.

Microwave a stack of corn tortillas for about 15 seconds to make them more pliable.
Add the fish, and whatever toppings you are using.
-Bell pepper salsa
-Quinoa
-Cabbage
-Sour Cream or crema
-More cilantro
-Lime wedges on the side
-Cilantro Jalepeno salsa
-Store bought salsa..
-Whatever you feel like
