Okay. I watched a video last week or the week before by Jamie Oliver.. (https://youtu.be/z71HTc1lG-M) about roasted duck lettuce cup things. I love duck and wanted to try and make them. So here is my sort of version after going to several stores and locating a duck.
Ingredients:
Duck-
the duck (mine was 4.5 pounds)
chinese five spice powder
salt
pepper
Hoisin Sauce-
hoisin
garlic (finely chopped)
mint and/or cilantro
lime juice (always fresh.. limes are cheap and last for a while.. use them in your water if they are going bad)
jalapenos/fresnos/thai chilis… or leftover cilantro/jalapeno salsa from the fish tacos you made last week
Assembly things
Lettuce – Bibb/Butter/Boston whatever you call it
Duck
Hoisin sauce with the added yumminess
Chilies
Scallions
Mint
Cilantro
Instructions:
If frozen, defrost your duck in the fridge as per package instructions.
Look in the body cavity, like a whole chicken there will be parts.. These are tasty too, but just toss it you aren’t planning on making a duck stock anytime soon.
Rinse thoroughly with cold water. Put that duck on a plastic cutting board and get it out of the way.
Wash your sink and hands and all the other stuff really well and preheat the oven to 350 degrees.

Trim excess fat, and skin, and parts like the tail.. or keep that on.. whatever.
Pat dry with paper towels… Wash your hands again.

Season with a bunch of Chinese Five Spice, Salt, and Pepper.


Put the duck in a 350 Degree oven on a roasting pan and wait.
I had a 4 1/2 lb duck and it took about 2 hours until the breast fat was rendered and my thermometer read 160.. Take it out then, it will carry over the extra 5 degrees, maybe even more.

Wait for it to cool a little bit, and shred like a chicken. Make sure you get everything and peel off the skin, chop that up, and add to the shredded duck. Then just assemble your lettuce things.
